Dessert Sunday: Orange Pudding

Ingredients

  • 3 Cups Orange Juice
  • 3 Table spoons Ground Rice
  • 1 Cup water
  • Grated Rind of 1 Orange
  • Sugar to taste
  • Rosted Almonds

Preperation

  1. Stir all the ingredients together-except the almonds-and cook over very low flame, stirring constantly, until the pudding thickens like thin custard. Pour into a shallow serving dish, let cool, and decorate with almonds.
  2. The quantity of sugar depends on the type-and thus sweetness-of the oranges. With burtu’an sukkari, or sweet oranges, use only half the normal amount of sugar.
